So I started out this week (on Sunday) with the notion that I was only going to eat pre-prepared meals this week. It has been fun, and I am on Tuesday now. Interesting concept. If you only eat prepared meals, by nature you are only going to primarily eat whole foods. Also, you tend to add less crap to them and you tend to eat more fruits and vegetables.

Since I am in this COVID situation, I might as well spend the time I would not normally have preparing every meal that I eat! I have a lot to learn, but yesterday I made my very own roasted vegetable salad and this morning I made my own special oatmeal completely from scratch and it tasted awesome!

I feel really good today, we will see if this helps me out. I will report back if this turns out to be a life changing idea.
