Green Beans for Breakfast

This morning I decided that for breakfast I would eat the following – broccoli, peas, zucchini, and green beans. I put some olive oil in a pan, and cooked them up, put some goat cheese on the top and ate them like I would a bowl of oatmeal. Now why in the world would I do this? Disgusting right?

Three words. Embrace the Suck.

By eating a bowl full of green veggies in the morning I accomplish quite a bit in a short period of time. Here is the list for your consideration.
1. I get my healthy green vegetables consumed first thing in the morning. Awesome! I can feel good about that.
2. I am getting a blast of highly valuable nutrient sources such as iron, magnesium, potassium, many vitamins and dietary fiber.
3. My hunger was completely satiated all the way to lunch. I was not the least bit hungry or tempted to snack after completely stuffing myself with vegetables.
4. After eating a bowl full of green veggies, everything else I do that day is going to seem awesome by comparison!

I started the day out incredibly healthy, full of a very clean carbohydrate source. I feel better about myself and I actually feel better as well. A little spring in my step so to speak.

Before you turn your nose in disgust. Give it a try! One of those frozen veggie packs from Trader Joe’s would be a perfect morning meal!
